Well, what they could REALLY do is simply not walk around with big ass, avegerage 200 weapons. After all, what do they need them for? If a mortal attacks them, or pisses them off they can just smite them, or at that point they could wield their maces of flaming death and humming vorpal poisonous ice daggers. It's not like the mortal can win even if the immortal is naked.

I think all in all, all immortals should be set to -50 damage or something of the sort, and simply use spells to squish mortals when required. Hmm.. probably could just have said that to begin with.
