One commonly used one is ZMUD. I've heard a lot about Wintin, MudMaster, and a few others as well.

There's a forum about how to set this up in ZMUD at http://cf.qhcf.net/.

If you use UNIX, Waigerits is a big fan of TinyFugue (available from http://tf.tcp.com/~hawkeye/tf/), and he has a page devoted to it somewhere. (Couldn't find a link)
