Admittedly a difficult fight for an Arcane. Automatic skills are their bane. My advice (pick and choose... you wouldn't have had time to do it all):
1) Do everything Imbrogno said.
2) Wands, staves, scrolls, special gear. If you are expecting to kill with an arcane trannie, you need some means of dealing damage to a sturdy foe like a heroed Paladin. A staff of striking would have ended this fight. If you don't have these types of items handy, you should be exploring/gathering rather than making attempts on paladins. (If you don't know where to start, fellow Sylvans are likely helpful there.)
3) Haste the beast if it's tanking. It will cost you one round, but it might buy the beast a couple.
4) Other spells: Earthbind (nice damage, quick, easy), reduce (he can't dodge, but he can parry and block.... size works in his favor here).
