The main thing about you need to know about this fight is that he had far more damage potential than you. Firstly at low ranks, its matters little that he had better armour, or how you have practiced dodge, simply because an assassin would caltraps you to stop you dodging so much, and then use one of a multitude of skills to damage and lag you (in this situation, throw).
Disarming is usually a good idea against most opponents, but an assassin has unarmed combat, so you disarming him and bashing as if he isnt going to tank so well anymore was a mistake. Also I assume you use swords, and without the likes of jab the likelihood of the assassin out tanking and out damagung you is very likely.
Really, the best way to win would be to have ran, and fought when you are stronger, although one tactic would be to dual wield a couple of axes or something (assassins cannot parry most weapons). This may have worked...or, it may not have.
