You may have just at least partially answered your own question. Pretend you're a mage. Now pretend you're a mage with dwarf str, dwarf con, dwarf hp, and enough skills between spells, wands, scrolls, and staves to negate any and all bad things about dwarves, and you'll understand why dwarven mages would just suck.
