This is the first flaw in your argument against your friend. Not being able to affect Zorszaul does not make it ok for a guy to quit when Zorszaul attacks his guild. It's shitty roleplay. You're saying that because he'll die (and he will) he should quit. Wrong.
Now, if I were playing a paladin, I'd probably fight Zorszaul (and probably die), just because that's what I think a paladin would do. No better way to die than for a good cause. A case can be made, however, for said paladin to instead use a teleport potion and get the hell out of Dodge. Personally, I'd attack, and if (read: when) things started to go awry, I'd flee and quaff that potion. I sure as hell wouldn't quit because of it.

I don't see any char, paladin, necro, ranger, what have you, having a chance against a prepared Lich one on one. Not if the Lich has any clue. Zorszaul has a definite clue. The trick is catching a Lich unprepared. Zorszaul just makes this really hard (impossible?) to do.

Your friend is 100% correct in his argument saying that "player X was a wimp because he would quit when Zorszaul came to town and attacked his guildguard". You lose the argument, if that is what it is about.
