From my experience, the worst thing to do is keep trying to flee, unless you have hurt their ability to follow you. They get that first attack more often than not, and all of their hits hit hard...thing is, with a Decent dexterity, parry dodge and shieldblock perfected, they won't hit you very often.

I would use this time to hurt them, Mountain storm can break bones and is very nice. Nerve is also nice. As is throw...usually if you can dodge their attacks often enough, keeping them in the fight is the best way to survive an attack.
