Steal from a mob that is already sleeping. For instance the kids in the orphanage in Balator. Already sleeping they won't wake up. Also there is a guard in camelot that is also sleeping just incase you really don't want to take any chances. Go buy some bread for 5 coin each give all your bread to the mob then procede to steal all the bread back. Repeat. Until learned. An elf thief perfected in about 30 minutes.
When perfected your odds of stealing are better but if you steal from a mob much higher than you, you might as well run, and run fast.
