I cannot answer for all the Immortals, but I know that any time I choose to interact with mortals I most definatly check to see if they have a description and a role.
If they are coming to me for empowerment, I will turn them away with reason about not having a role. This definatly shows that you have thought about your character and have an idea of where you see your character going.
When I decide to interact through mortals through guildmasters, bartenders, drunks, whatever suits the need, I'll typically skip interacting with those people who do not have a role since I really have no idea what they are going to expect from them. In the past I've gotten responses such as "Hey! Which immortal are you?" and "Bah! Stupid immortals always ruining it for me". I've found that people who take the time to flesh out their character with a good description and role, are ready and willing at any opportunity to roleplay.
