Evil is tough to play well. The problem is that most people play exaggerated caricatures of evil folk, and don't give them motivations and goals much beyond "But I'm evil and I'll do what I want."
Here's the catch: Most realistic villains don't -know- they're evil. I won't bore you with lists of historical figures, but the majority of them thought that they were doing the right thing. Two of the more common causes of atrocities over the ages are organized religion and patriotism. Both of these can inspire people to wondrous and noble acts, but they have also pushed people to commit horrible deeds in the name of God and country, usually by people who thought themselves among the best servants of their righteous causes. Very few people run around trying to harm others for no reason. Having an evil alignment shouldn't necessarily mean "Psychopath".
If you want CF examples, read the religion helpfiles of gods with evil aligns. Sure, there's your Vilhazarog, but there's also Zulghinlour, Scarabaeus, Jullias, Cyradia, and the like. A broad spectrum, and none are nearly as one-dimensional as the majority of PK-happy Eastern-Road-Sitters. Evil shouldn't be nearly as boring as a lot of Therans make it.
