Well with your con you are getting the lowest hp a level between 7-9 a pop. (not that you would be getting that much more with a human mage)
So the number 500 sounds reasonable, you will have trouble(understatement) finding 500 hp in gear as a newbie.(to reach the 1000 mark) But it is not impossible at hero, but somewhat complicated by being a elf and thereby limiting the items you can wear, with some tradeoffs and rather rare items you can reach the number though.
