Average damage, as explained below, is calculated
by some dice roll.
5d10 would be (10+50)/2 = 30 avg damage.

Damroll is a modifier that is simply added on to
your overall damage. Take note that enhanced damage
is applied only to the weapon's average damage
and is in no way related to your damroll (from what
I hear).
So a warrior with a 3d10 sword (average 20), and
a damroll of 25 would do between 35 and 55 hp of
damage (without taking into account enhanced damage).
I am unsure of the modifier of enhanced damage, but
assuming it is 2 (though it is probably level based),
the warrior would do between 45 and 85 damage.
Now, if you had two weapons, one is avg 20 (say its
19d2 for simplicity) +3 +3, and the other is avg 22 (21d2)
+0 +0.
Someone with enhanced damage (assuming double average
damage) could do up to 38*2+3 = 79 damage with the avg 20
weapon.
With the avg 22 weapon, that same warrior could do up to
42*2 = 84 damage with the average 22 weapon.
As you can see, they get more boost from average damage
than from damroll alone. Take note that if the avg 20
weapon had +9 damroll modifier or higher, it would likely
be the better choice over the avg 22 weapon.

Hitroll:
Hitroll is somewhat of a mystery to me on cf. I know that
on some diku based muds, hitroll will affect parry. I have
also heard rumors on cf that anything above a 15 hitroll
is unnecessary.
