Familiars are random but are based on your alignment.
i also believe that the area you call them affects the random chance you have at getting a certain familiar. Like when calling from the skies you have a better chance at getting an owl or raven but on the ground there is literally no way of knowing what you will get. i have played many conjurers up until rank 17 just to see what i would get if i did something different every time. So basically my information is speculation, based on what i have had happen to me.
