Depends on your race. For felar I'd perfect spear and staff off the bat. For the other races I'd go with sword and dagger. Eventually, reguardless of race, you want to be at least 90% in all.

Definatly do parry dodge and shield block. I do them all at once. (13 I think)

Make sure you keep up on your kicks.
Master throw and trip.
Master strangle.
Master Kotegaiwhatever and Kanetsuwhateveraza. You should naturally master caltraps too.

That's your bread and butter, in my opinion. I'd consider these things mandatory, and everything else a VERY good idea.
