For food, you can summon petrom (at list until recently
you could), for water - I really forgot what I did summon :(
For zombies - depends on rank. If you can kill elite storms,
then elite storms. For lower ranks, elite dwarven guards,
or rangers from Emerald. Though the amount of rangers in
Thera is so big that you may have to try 5.ranger, 10.ranger,
15.ranger etc. For most low-level necros, novice knights from
Basilica can be fine. Rat-man is good for his nightmare blade,
it does much better damage than most weapons with higher
average. (Dunno why :)
