How well a weapon parries depends on your opponent's weapon, and some other factors. (Your skills, str, size, etc.)

Most generally speaking, all of the exclusively two-handed weapons (staff, spear, polearm) all parry well, especially with the specialization skills.

Among the one-handed weapons, whips and daggers suck in general. The others are all moderate, although swords and maces seem a little better than average to me. (Sword specs tank quite well.)
