I haven't played in awhile, so most of my go-to areas where I would find gear is no longer around or have been revamped.

Are there any lowbie-friendly shields a guy could grab in the game still that help with learning stone armor use while ranking?

The item listings in the wiki for stone/obsidian/onyx/etc in are also mostly out of date, or have gear that is way too high of level for newbies to grab.
