Evade can help you avoid them entirely. "Evasive" edge can up your ability to evade. Also "parry anything" if you're a warrior. There is also a "Strong Wrists" edge that makes you less likely to suffer the "wrist break" affect from kotegaeshi. Not sure if there is a corresponding one for kansetsuwaza. Beyond that, just wear a lot of +str/+dex gear, or be the kind of person who can kill the assassin before he can get both of them off.

Blackjack checks headgear now. I'm not sure if the staff has said what exactly is the key factor (material, level, AC, etc.) I think the key factor is material, but it might be AC instead. There is also the "remain conscious" edge, which (slightly) reduces your chances of being knocked out by blackjack (and lots of other things). The stuff pertaining to "Evade" also applies here, just like for any other skill. If you're a warrior, there's also the "Place of the Raging River" legacy, but the help file makes it sound like it's based on intelligence, so it may not be appropriate for "dumb" races. I think one of the Invoker "greater shields" may also render them either immune, or resistant, to blackjack. (Shield of Fire, maybe?)

Thief poisons
In general, resist poison helps. You can get this by being a duergar, svirfneblin or gnome, or by wearing one of a couple different items that grants resist poison. Ancient Green Dragon Hide, wooden shin pads and...uh...plain phylactery, I think. With regard to knockout poison in particular, the stuff I said about "Remain Conscious" and "Place of the Raging River" would also apply. Or be a lich, in which case you're completely immune. If you're worried about "suggest", then keep "nogive" on at all times, and be ready to drop anything that gets planted on you. Also, be ready to turn "trustall" off if the thief suggests that you trust all. Assuming that's even possible any more. If you're worried about the guy suggesting you eat something, eat yourself "full" before fighting the thief, if you know a fight is about to happen.

There is now a "thick veined" edge that reduces bleeding damage. It's pimp. Beyond that, "evade" will help you avoid the moves altogether, and str/dex gear will help you continue to function if/when they do eventually land. If you're a warrior, then the "Riddle of Resilience" legacy might help. Also, carrying a crapload of coin at all times is helpful so you can "heal heal" a lot.
