Also, you can do 'yum update' on fedora so you can avoid the GUI. Then you can cntrl-C if you want to kill it at any time.
(G)Ubuntu is probably similar in these respects, but I haven't tried it, so ymmv if you go with standard Ubuntu.
Kubuntu has it's own update GUI tool, which has been responsive to me when I use it. Actually, there's 2-3 different GUI tools you can choose from. The Kubuntu 'control panel' thing is weird, but works just fine once you get the hang of it. By weird, of course, I mean unfamiliar when moving from win32.
