Second thing is whether you prefer roasted buckwheat or not. Russian cuisine almost exclusively utilizes roasted buckwheat, I don't know whether it's readily available in U.S. (should be available in Russian shops though). I for example have never tasted the unroasted one (I guess it's shite anyway or we wouldn't bother to roast it right? :) )

Not many recipes you can find in English, and Russian ones are far too many. I can lead you to nice recipes with video if you don't mind Russian.
