That's "gryphon," and I think you named pretty much all of them. As for what quest forms there are that we don't know about, well, we don't know about them. Though I wouldn't be at all surprised to discover that there are quest forms for every major. And no, there's no built in quest - in fact, the best way to assure yourself of never getting a quest form is to ask for one.
