Advanced picklock? Not a lot of thieves have it. It's freaking 8 thief points.
Selling stolen leet gear to rich PCs? You'll hardly get lucky that often.
Fence? It's pathetic.

What remains? Kill mobz, get lootz, sell to merchantz. Kill mobz that have lots of moniez.
Nothing that a non-thief can't do. Even better, non-thieves have easier time killing tough mobs.
