They've got some glaring weaknesses in terms of Con based saves (rot, plague, poison) and a reliance on their weapons which an auto-disarming bash giant would nail. Swords are one of the easiest weapons to disarm because they parry a lot and aren't two handed.
If we're theory crafting then I'd go for a giant shaman. I guess Kraldinor fits the bill. Rot, plague spam until they drop, chase them around. Whither if it's a defender and keep plaguing anyway. They can't poultice too many times in one fight. If they're a berserker, summon in some nasty mobs to flee around. If they're not a villager, dispel and direct damage. If they start lashing then they're in a situation -dex will get them and probably not you.
A bard is a nice option because of the two big stat reducing songs. Go for tragedy, add up the maledicts for -15str -15dex, then you can just disarm. They can't pick anything up! If they're a villager they can't get resist mental. Same goes for boneshatter+disarm but obviously you have to land the damn boneshatter first. This just felt like an easier way. You've also got fright for entwine and tragedy boosts that too.
Villagers are also very vulnerable to assassinate. Vanish gets you around entwine/lash if you fail. Invoker with shield of slime could be a contender if they're not a villager. Iceneedles ftw. Quicksand too.
