Not sure about trolls, but enslaving the undead ogre thing from Barovia was pretty sweet, it does that uncurable physical blindness clawing so I'm fairly sure it'll do all it's normal moves. Good stuff. And yes, you can spinebreak/enslave it.. don't think it works in combat.
