When you roll your char, the game decides at what hours you will change age catagories. That first part was educated assumption.

The teirs,very wrong but for sake of example, are somthing like:

young
mature
old
ancient
dead

Age gear has no effect unless it knocks your "hours" into the hours of the next teir. When you take it off, you will still be the next teir aged.
If you wear enough +age gear to push you into dead from ancient, you will die.
