1) She only ate two bites of her dinner last night and then took her insulin, I don't believe she took a smaller dose than usual. Is this what caused her blood sugar to crash?
Probably. Insulin makes your body chew through sugar. If you ate nothing with any sugar/carbs in it and then took an insulin shot, your blood sugar would fall low also.
2) Does anyone know of a good, healthy way to raise blood sugar levels?
In the situation you were in, liquid sugars are best. We kept Pedialyte (from the kids aisle in the grocery store) around for my grandmother. You have to escalate that blood sugar quickly in that instance. Longer term, you should get her to go to a nutritionist and you should go with her. They can explain what foods are best and what are better to avoid. There are literally tons of websites out there with information on what to eat and what to avoid when you have diabetes. Honestly, that diet plan isn't bad for you whether you have diabetes or no. Regulating your sugar intake has lots of positive effects.
