Just set up the 2000 database, do a comparison against the two and generate a schema generation script. Edit it as necessary to remove any features that don't migrate, I'm not sure if Red Gate will do this automatically for you or not. Then run the script against the 2000 database. Afterwards do a data copy using the same tool.
