Try elven constitution gameplay. No wait, hear me out!

Start on hardest. Never, ever take hitpoints, only stamina or mana. Scale down difficulty as standard enemies start to take you out in one hit. Once you kill enemies in one or two hits, and they do the same to you, stay at that difficulty and stop leveling. Now you have realistic damage mode. Beware of dragon fire.
