Defense/water really is survivable and useful, especially for nexus (considering you will be doing a lot of defending near water ;) ). However, remember that your goal is to utilize your cabal for information as well as to increase your fun stick (if possible, theirs as well). So, you need something that will allow you to talk whenever you need to -- not just when you are out of form.
My very first character was a warrior named Stevers. I went Nexus (neutral/neutral human warrior, sword spec [as generic as can be]). Everyone knew that I was both 1) a new player, and 2) a complete idiot. However, they accepted me because I tried my best to RP and I contributed to raids/defenses/etc. It's been awhile since then, but Nexus is pretty consistent here. Show that you actually want to learn the game (why else would you be playing?), and the other nexuns will help you.
As far as a combo, I think myself being a noob still can offer some decent suggestions
Warrior of some kind. Be careful with your race choice, as not all can go Nexun (evil or good align only chars can not). Do you not mind grinding to get your skills up? Try a cloud giant. They are survivable, but require you to be patient with skill ups (check "help skill learn" in game -- this can help you with those tough-to-achieve skills).

Don't want to do a warrior? Consider a thief. They have better hide than assassins, and they have all sorts of paths to choose from.

Want to do a mage? I would advise something other than conjie or shifter for your first character, especially if you're going nexus. Try any mage class other than those two (note: you cant do necro or A-P).
Want some RP with the Imms? Try an empowerment class. Healers are popular options for Nexus (though I can't say whether or not they are fun to play for a new player).
