Not every fight with an orc is orc bashing until dead. Lots of builds can require blood chugging which also leads to (potentially) defenders patching themselves up. You *can* outlast an orc as a battle defender, but the time frame for that is really long and chances are they'll give up or wear you down some other way somehow.
Berserker can land you deathblow kills (which is always true) and that kind of damage output is difficult for orc to handle. STSF elf/d-elf sword would rip through an orc either way, berserker or not, but the zerker *might* land more kills. It is hard to say for sure. Zerker isn't outlasting an orc, and if they lose weapons even STSF elf is going down like a chump. I've definitely chugged my way through fully charged STSF before, but it is tough.
If I was going to do (from the rager end), I'd definitely go STSF elf (for swiftstrike) and take swords for riposte to rip through orcs. Then I'd make damn sure I had a cursed sword or nodisarm or something.... Probably in both hands... Anything else leads to elf steaks and orc artworks.
Keeping two cursed swords as an elf rager zerker seems like a tall order to me, because you still have to deal with flurry/drum/burst damage of all sorts that will make your piddly 800hp elf with an iron vuln into a wet smear. Probably have to take gates or soul with STSF to try and beef up there. Plus parry anything, evasive, etc.
